Soup Recipe for all those Betty Crocker Boxed Potatoes

Are you more stocked than ever on Betty Crocker boxed potatoes?  Making 50¢ a box with the Buy 5, Save $5 sale at Fry's, has my pantry bursting.

I got this recipe from a reader and thought I'd pass it along.  I haven't tested it, but I'm not one to test recipes and pass them along.  I never stick to them, so I would be evaluating a different recipe.  I consider recipes inspiration.  :)  But, this has given me inspiration to try out a soup of some kind.  (Thanks, M. Family!)

Soup:

1 (4.9 oz) pkg Au Gratin potatoes

3 1/2 cups chicken broth (from 32 oz carton)

1 (9 oz) pkg frozen broccoli florets

2 cups milk

1 1/2 cups Swiss or mozzarella cheese

1/2 cup frozen corn (optional)



Mix all of the soup ingredients except for the cheese together in a big saucepan.  Heat on high until boiling.  Reduce heat, cover, and simmer for 15-20 minutes, stirring occasionally and breaking up the broccoli with two forks when tender enough to do so.  Watch it carefully because it will boil over a lot if not stirred frequently enough.  When the potatoes are soft, stir in the cheese.  Cover and simmer for roughly five more minutes, until the cheese is melted.  Serve with hearty bread.

    Thanks for the recipe. I just made this today. I used the Lipton stock instead of chicken broth and almond milk in place of regular milk, but I otherwise stuck to the recipe. I opted mozzarella cheese and used corn in the soup. It's good stuff and super simple.

      You sound like you cook like I do!  I use what I have and then change things we don't like or add things I want to get rid of.  I'm glad to hear you liked it!  I brought some boxed potatoes to my sister's house in CA, so I'm thinking we'll try a soup of some kind one of these nights.  Thanks for the vote of confidence for this!

    We tried this too! The boys loved the cheesy broth, need to work on them eating "chunks" in soup. :-) Definitely an easy last minute dinner recipe we will use again! Thanks for sharing!
     
    Oh and we just used a shredded mexican cheese mix I had on hand and it worked great.

      Another person emailed me and said they liked it and it’s good to have extra assurance. Someone else asked me if I tried it, but I realized the only same ingredients I used (as listed) were the potatoes, water, and milk. So, I think I changed it just a tad too much to give an accurate critique! :) Glad to know it’s good with only a slight cheese modification. My biggest change was leaving out the cheese. Yeah — sad!! My husband doesn’t like cheese. So, I thickened it with some flour and made it more chowder style and used peas and corn. I also didn’t measure anything. Basically, it’s a pretty versatile recipe and can be modified to fit what your family likes or what you have on hand. Thanks for letting us know you liked it!

    I added smoked suasage and used shredded cheddar cheese. My husband won't eat soup as a meal if it doesn't have a form of meat in it! I also left out the corn. It turned out great the kids and hubby eat it up! Thanks for sharing!

      My kids asked, “Where’s the ham? Or, at least, where’s the chicken?” :) We tend to agree on the meat thing around here. Next time, I will add something . . maybe even bacon will work.
