Fry’s ~ Lipton Onion Soup 50¢ After Catalina + Potato Recipe

I have a bargain and simple recipe for you.
Here's the bargain:
I wanted to highlight this deal that's been on the Fry's list. The coupon has disappeared, but it's still a great deal. If you factor in the Catalina, you are only paying 50¢ per box!

I also got a $1 Catalina for buying two of the these boxes, though only the larger boxes are tagged at my store. It goes thru 11/27. Also, I'm not sure why, but at two different stores, the reg. onion variety is not marked at $1, but that variety has also been ringing up for $1.
And, you can get a 5 lb. bag of potatoes at Bashas' from Friday – Sunday this week. (Or, ad match at Walmart.) They also have a great deal on various butter (or spreads), see the list. Or, get the bargain butter you already have out of the freezer. :)
It's a very simple recipe that my family loves. My daughter just wanted me to make extra (they're in the oven now) so she could have leftovers for breakfast. :)
I don't measure anything and change the amount of potatoes often, but I'll make up some amounts and look like I know what doing, below. :) You really can't go wrong. If the potatoes are too dry, throw in some more butter. If you want more flavor and more potatoes, use two packets. It's very flexible.
Lipton Onion Soup Potatoes
Peel (if you want) and then dice (fairly large) 5 – 6 medium potatoes and place them in a shallow baking dish
Melt 2/3 stick of butter or preferred spread
(Vary the amount to your tastes and how moist you like it. You might prefer a whole stick. You can use about 1/3 cup of oil if you prefer, but we like butter better.)
Stir one packet of Lipton onion soup mix in the melted butter
Pour mixture over the potatoes and stir before placing in oven
Cook at 425º for 35 – 40 min. or until potatoes are tender and golden brown. I usually stir them at least once in the middle somewhere.
(You can have it lower, if you need to for something else you're cooking, but increase the cooking time. If I'm in a hurry, sometimes I'll microwave them for awhile and then throw them in the oven to crisp them up a little bit for 10 min. or so.
