MyBlogSpark sent me a gift pack and one to give away, just for telling you some creative ways to spruce up your tacos. I have to admit we just have boring tacos, but how boring can they be if we like them? Well, that’s been my theory. Since I’m not very creative in this area, I asked the gals I work with. Here’s what they have for you.
Gina — She puts taco seasoning in her sour cream, to top her tacos or even to make 7-layer bean dip.
Susan — She suggested baking the tortillas in the oven and making a taco salad.
Ruthanne — She has a recipe for spaghetti tacos for you . . . I’m going to give these a try soon!
1 pound ground beef
1 package taco seasoning mix
1/2 onion, diced
1 package fideo noodles (usually found in the Mexican food section). You can also use half a pound if broken angel hair pasta. The Fideo is only like $.36 at Walmart.
1-2 Tbsp oil
1/2 C salsa, Rotel, or even tomato sauce (depends how spicy you want it)
1 1/2 C water mixed with
2 Tbsp chicken or tomato bouillon
(this is a little more condensed than what it says on the bouillon directions, but this is where we’re adding the salt for the dish
Chopped Cilantro to taste (optional)
Shredded cheese and sour cream (optional)
In a medium skillet, add oil and heat to medium/ medium high. Add dry fideo noodles and chopped onion. Have salsa and bouillon/water nearby. Continually stir until fideo is lightly browned. Carefully add salsa, Rotel or tomato sauce and then bouillon/water mixture. (This will need to be quick so you don’t burn the fideo. It will steam, so be careful!) Turn down to a low simmer and cover 10-15 minutes until all liquid is absorbed (try not to lift the lid). Meanwhile, cook ground beef and add taco mix according to package directions. Once fideo is ready, take off lid and lightly lightly stir. Add as much or as little taco beef mixture to your taste. You can also add meat to the taco shells first and then top with fideo. Top with optional sour cream and cilantro.
